Raw rhubarb pickle

Raw rhubarb pickle 18.07.16

1k rhubarb cut in small pieces and pack or stack in jars

Boil 600ml apple vinegar, 600g sugar, 2 pinches salt, 2 tbsp lemon juice, stick vanilla,  10-20 mint leaves mint, zest I lemon,  half chopped fresh chilli.

As soon as boils, pour over rhubarb. Cover . Store at least one day before use
